A Kolsch-style beer, Full Circle is a refreshing celebration of this brewery’s belief in balance.
Michigan Awesome Hatter (5.8% ABV; 55 IBU)

The epitome of Hand Crafted, Michigan Awesome Hatter is an IPA that celebrates community, collaboration & local agriculture. Cascade hops from the Leelanau Peninsula provide bright citrusy counterpoint to the delicious and earthy malt notes from Michigan grown and malted 2-row barley. Thanks to our collaborators, Michigan Awesome.

The Poet (5.2% ABV; 37 IBU)

Pale ale, Munich, Crystal, and Chocolate Malts make up the grain bill in this Oatmeal Stout, with Glacier and Nugget hops to round everything out. Oats bring a creaminess and soft mouth-feel to rich, roasty malt character.

Dragon’s Milk Reserve (11% ABV; 51 IBU)

A delicious, velvety stout aged in oak with Chili de Arbol peppers. The earthy pepper character mingles with the dark roasted tones of Dragon’s Milk as spice slowly warms your palate.

“St. Feuillien boasts both one of the oldest and newest brew houses in all of Belgium.  There is nothing like it’s blending of old and new world, shown here to great effect in a collaboration brew with one of USA’s most creative breweries, Green Flash Brewing Company. The beers of St. Feuillien undergo second fermentation at a very low temperature for up to 6 weeks, giving them a fine, sophisticated and delicious flavor. Beer this good takes time.”

Not only does beer this good take time, it speaks for itself. This Thursday, we’re featuring two fantastic “friendship” beers by these monster breweries–Bière De L’Amitié and Belgian Coast IPA–among several others we’ve listed below:


St. Feuillien/Green Flash Belgian Coast IPA (7.5% ABV)

St. Feuillien owner Dominique Friart put it best when he described this brew as having, “a richly fragrant, very hoppy nose with a slight fruity note. A powerful taste characterized by a very intense bitterness. In short, we are seduced and conquered!”


Bière De L’Amitié (9.5% ABV)

St. Feuillen’s centuries old brewing traditions combine with Green Flash Brewing Company’s cutting edge brewing techniques to form their first collaborative brew: Bière De L’Amitié (Friendship Brew). A blond Belgian collaboration ale, brewed with St. Feuillien’s traditional yeast and spices. For a modern twist, rye malt, wheat malt, and American Amarillo hops were added. At the crossroads of collaboration, they dry-hopped the brew for more zest. It’s old-world Belgian Abbey-style meets new-world American craft brewing – and a friendship is formed.


La Blanche (6.3% ABV)

La Blanche was conceived as blending of Belgian Wit and Abbey Tripel, and the result is a relatively strong, fully aromatic and wonderfully complex beer. It has the fine almost minty herbal character of St. Feuillien Tripel with a luxuriously full-body.


St. Feuillien Speciale (9.0% ABV)

Speciale is the pinnacle of the brewing art at St. Feuillien. It’s brewed each summer, aged for a minimum of 6 weeks in cold tanks and then conditioned to perfection over another 2 weeks in the warm room. The result is a beer that has a clean, delicious character redolent of figs, dates, and currants. Allspice, cinnamon and cocoa on the palate make Speciale a veritable cornucopia of autumn and winter flavors.


Road Warrior (9.8% ABV)

This Imperial Rye IPA is brewed in the name of the Road Warriors–the Green Flash sales team who tirelessly hit the streets, traveling from town to town and pub to pub sharing the Green Flash experience. Road Warrior™ charges full flavor forward. Columbus and Mosaic hops, rich crystal and spicy rye malts pave the way for Mosaic and Amarillo dry-hopping to boldly shine through in the finish. Raise a glass to those who never settle!
West Coast IPA (8.1% ABV)

As craft beer pioneers, Green Flash embarked on an expedition to brew the benchmark West Coast IPA. They  ventured into the unknown and struck gold, discovering a tantalizing menagerie of hops. Simcoe for tropical and grapefruit zest, Columbus for hop pungency, Centennial for pine notes, Citra for citrus zest and Cascade for floral aroma are layered throughout the brewing process. West Coast IPA® exemplifies the Green Flash spirit of adventure and discovery.
Le Freak (9.2% ABV)

Belgian-Style Imperial India Pale Ale

Le Freak™ is the first-ever hybrid ale of its kind: the convergence of a Belgian-Style Trippel with an American Imperial IPA. Spawned over barstool pontifications between Publican and Brewmaster, this zesty Amarillo dry-hopped, bottle-conditioned marvel entices with fruity Belgian yeast aromatics and a firm, dry finish.
Double Stout (8.8% ABV)

Black Ale

Green Flash explored 19th Century British Stout recipes, then charted a fresh course to land on a modern American version of the old-world classic. This Double Stout encompasses the very best of both worlds. Golden naked oats, dark crystal and roasted malt offer a luscious balance of bittersweet chocolate and hints of coffee.

Founder’s Brewing Co. is coming to the Moon this Tuesday!

In honor of Chicago Craft Beer Week, we’ll be tapping the rare and delicious Founder’s KBS, along with their All Day IPA, Rübæus, and Barrel Aged Red’s Rye. Try all four in a flight, or enjoy a pint of your favorite!

All Day IPA (4.7% ABV)

All day keeps your taste satisfied while keeping your senses sharp. Naturally brewed with a complex array of malts, grains and hops. Balanced for optimal aromatics and a clean finish. The perfect reward for an honest day’s work and the ultimate companion to celebrate life’s simple pleasures.

Rübæus (5.7% ABV)

Not another boring summer wheat beer or lemonade shandy—Rübæus is Founders’ way to celebrate the season’s warmest months. Optimizing the flavor of fresh raspberries added at multiple stages during fermentation, this stunning berry red masterpiece is the perfect balance of sweet and tart.

[Barrel Aged] Red’s Rye (6.6% ABV)

Red’s Rye has serious hop bitterness, along with an unyielding grapefruit bouquet from the Amarillo dry hop, balances the malty richness of four varieties of imported Belgian caramel malts. Pours a spectacular crimson with a creamy tan head. A generous addition of rye malt accentuates a spicy, crisp finish. Then barrel it and put it in a cave for a few months and you get something very special.

KBS (11.2 % ABV)

KBS is an imperial stout brewed with a massive amount of coffee and chocolates, then cave-aged in oak bourbon barrels for an entire year to make sure wonderful bourbon undertones come through in the finish. Makes your taste buds squeal with delight.


In addition to the flights, we’ll have a limited number of last year’s KBS in the bottle for those who’d like to taste the difference from year to year.

Boulevard Brewing Co. Tap Takeover Thursday, 5/8

If you thoroughly enjoy drinking delicious beer, there’s no reason you shouldn’t be at Prairie Moon this Thursday. Just sayin’.

Boulevard Brewing Company, one of our favorite brewers based in Kansas City, Mo., will join us from 5 to 9 p.m. for a mini tap takeover.  These guys consistently put out a fantastic product, and we’re thrilled to have them in the house again for another event. We’d love for all of you to be there to show them some good ol’ Evanston hospitality.

Four Boulevard brews will be on tap. Try ’em all in a flight, or devour a pint of your favorite. Here’s the draught lineup:

Tank 7 // Saison / Farmhouse Ale // 8.5% ABV // 38 IBU

Most breweries have at least one piece of equipment that’s just a bit persnickity. Here at Boulevard we have fermenter number seven, the black sheep of our cellar family. Ironically, when our brewers were experimenting with variations on a traditional Belgian-style farmhouse ale, the perfect combination of elements came together in that very vessel. You could call it fate, but they called it Tank 7, and so it is. Beginning with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.

Grainstorm // Black Rye IPA // 7.7% ABV // 65 IBU

Just when you thought it was safe to come out of the root cellar, along comes Grainstorm, a big, wet wallop to the senses. In the glass, dark and turbulent clouds gather. A high-pressure system of pungent hops collides with a stationary front of barley, wheat, and rye. The forecast: a veritable monsoon of flavor, with surges of roasty malt, microbursts of hops, and a chance of golfball-sized hail. The extended outlook calls for unseasonably pleasant enjoyment.

Imperial Stout // 11.8% ABV // 63 IBU

Like India Pale Ale, the classic Imperial Stouts were originally brewed with high levels of alcohol and hops to withstand the rigors of a long sea journey, not to India but to Imperial Russia and the Baltic States. Our version is an over-the-top riff on the style, with a huge grain bill featuring several kinds of malted barley, wheat, rye, oats, and spelt. Robust grain and coffee flavors are counterbalanced by date and plum notes from the Belgian yeast. To add extra complexity and depth, this Imperial Stout is made up of a blend of freshly brewed beer and several barrel-aged beers, carefully balanced. Za Vas!

Rye on Rye // Specialty grain beer // 12% ABV // 47 IBU

This assertively flavorful grain is more often associated with whiskey than with ales. Even in that arena, it has largely been eclipsed by corn and barley, the sources of bourbon and scotch. But when we procured some seasoned barrels from our friends at Templeton Rye, we asked ourselves, “Why not?” Why not brew a rich, tawny rye ale, then mellow it in the warmth of charred oak rye whiskey casks? Two kinds of malted rye provide spicy sweetness, giving way to notes of caramelized wood and the citrusy tang of Citra and Ahtanum hops before easing into a dry, lingering finish.
