Founder’s Brewing Co. is coming to the Moon this Tuesday!

In honor of Chicago Craft Beer Week, we’ll be tapping the rare and delicious Founder’s KBS, along with their All Day IPA, Rübæus, and Barrel Aged Red’s Rye. Try all four in a flight, or enjoy a pint of your favorite!

All Day IPA (4.7% ABV)

All day keeps your taste satisfied while keeping your senses sharp. Naturally brewed with a complex array of malts, grains and hops. Balanced for optimal aromatics and a clean finish. The perfect reward for an honest day’s work and the ultimate companion to celebrate life’s simple pleasures.

Rübæus (5.7% ABV)

Not another boring summer wheat beer or lemonade shandy—Rübæus is Founders’ way to celebrate the season’s warmest months. Optimizing the flavor of fresh raspberries added at multiple stages during fermentation, this stunning berry red masterpiece is the perfect balance of sweet and tart.

[Barrel Aged] Red’s Rye (6.6% ABV)

Red’s Rye has serious hop bitterness, along with an unyielding grapefruit bouquet from the Amarillo dry hop, balances the malty richness of four varieties of imported Belgian caramel malts. Pours a spectacular crimson with a creamy tan head. A generous addition of rye malt accentuates a spicy, crisp finish. Then barrel it and put it in a cave for a few months and you get something very special.

KBS (11.2 % ABV)

KBS is an imperial stout brewed with a massive amount of coffee and chocolates, then cave-aged in oak bourbon barrels for an entire year to make sure wonderful bourbon undertones come through in the finish. Makes your taste buds squeal with delight.

Boulevard Brewing Co. Tap Takeover Thursday, 5/8

If you thoroughly enjoy drinking delicious beer, there’s no reason you shouldn’t be at Prairie Moon this Thursday. Just sayin’.

Boulevard Brewing Company, one of our favorite brewers based in Kansas City, Mo., will join us from 5 to 9 p.m. for a mini tap takeover.  These guys consistently put out a fantastic product, and we’re thrilled to have them in the house again for another event. We’d love for all of you to be there to show them some good ol’ Evanston hospitality.

Four Boulevard brews will be on tap. Try ’em all in a flight, or devour a pint of your favorite. Here’s the draught lineup:

Tank 7 // Saison / Farmhouse Ale // 8.5% ABV // 38 IBU

Most breweries have at least one piece of equipment that’s just a bit persnickity. Here at Boulevard we have fermenter number seven, the black sheep of our cellar family. Ironically, when our brewers were experimenting with variations on a traditional Belgian-style farmhouse ale, the perfect combination of elements came together in that very vessel. You could call it fate, but they called it Tank 7, and so it is. Beginning with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.

Grainstorm // Black Rye IPA // 7.7% ABV // 65 IBU

Just when you thought it was safe to come out of the root cellar, along comes Grainstorm, a big, wet wallop to the senses. In the glass, dark and turbulent clouds gather. A high-pressure system of pungent hops collides with a stationary front of barley, wheat, and rye. The forecast: a veritable monsoon of flavor, with surges of roasty malt, microbursts of hops, and a chance of golfball-sized hail. The extended outlook calls for unseasonably pleasant enjoyment.

Imperial Stout // 11.8% ABV // 63 IBU

Like India Pale Ale, the classic Imperial Stouts were originally brewed with high levels of alcohol and hops to withstand the rigors of a long sea journey, not to India but to Imperial Russia and the Baltic States. Our version is an over-the-top riff on the style, with a huge grain bill featuring several kinds of malted barley, wheat, rye, oats, and spelt. Robust grain and coffee flavors are counterbalanced by date and plum notes from the Belgian yeast. To add extra complexity and depth, this Imperial Stout is made up of a blend of freshly brewed beer and several barrel-aged beers, carefully balanced. Za Vas!

Rye on Rye // Specialty grain beer // 12% ABV // 47 IBU

This assertively flavorful grain is more often associated with whiskey than with ales. Even in that arena, it has largely been eclipsed by corn and barley, the sources of bourbon and scotch. But when we procured some seasoned barrels from our friends at Templeton Rye, we asked ourselves, “Why not?” Why not brew a rich, tawny rye ale, then mellow it in the warmth of charred oak rye whiskey casks? Two kinds of malted rye provide spicy sweetness, giving way to notes of caramelized wood and the citrusy tang of Citra and Ahtanum hops before easing into a dry, lingering finish.

If you love 5 Rabbit as much as we do, stop by and chat with representatives from the brewery from 7-9 p.m. We’ll have four of their beers on tap, so you can try them all in a flight of four (5 oz pours), or enjoy a pint of your favorite!

Here’s the draught lineup:

Missionario (6.8% ABV)

Latin culture is a complex stew of native traditions, European colonization and modern history. This wheat beer commemorates the earliest stages of contact between East and West, and those intrepid souls who made the journey to a wild and unknown land, setting up the chain of missions dotting the west coast of the Americas, from Chile to California. This beer starts with a wheat beer base, substantial at 6.8%/vol. Then uses muscat of Alexandria, an ancient grape belonging to a family of “aromatic” grapes that the Greeks brought to Egypt. These were known to grow in misson gardens, and are still used in Southern Europe for sweet or dessert wines. They have a perfumy, aromatic quality that punches through the wheat and malt flavors. Beyond that, this beer is a showcase of all the other things the missions cultivated: figs, oranges, dates, almonds, apples, pears, stonefruit and probably more. This year’s beer will feature a lovely topnote of Aldrich almonds from a small California grower.

Gran Missionario (8.3% ABV)

Gran Wheat Beer. Flaked wheat and oats add a rich creaminess to the base beer. Then muscat of Alexandria, an “aromatic” grape grown at the Spanish missions are added. They have a perfumy, spicy quality that punches through the wheat and malt flavors. In honor of the many other crops grown in Mission gardens, pears were chosen for this version of Gran Missionario. The beer is creamy, off-dry and fruity in a most complex way, with aromas of flowers and spice. A new hop variety, Hallertau Blanc, adds additional fruity aroma notes, complementing the Belgian yeast strain.

Huitzi (8.5-9% ABV)

A Belgian Strong Golden Ale, brewed with Pilsner and Vienna malt, Glacier hops and Belgian yeast. In addition ginger, chamomile, Thai palm sugar, and local Chicago honey make up the flavor profile and hibiscus flowers give this beer a nice shade of pink. Huitzi is a winter beer that doesn´t wallow in the dark cold days of this season. Like it’s namesake, the Aztec hummingbird god Huitzilopoctli who smashed the winter to allow the sun to return, Huitzi looks forward to the brighter promise of spring.

Ki’Chun (9.5% ABV)

Ki’Chun is a Mayan name meaning “tasty start,” which refers to the new calendar cycle for which this beer was first brewed. Fresh and dried Chanterelle mushrooms bring an ethereal apricot perfume, blending perfectly with the Vienna and melanoidin malts and toasted oats, amplified by the exotic fruitiness of New Zealand Rakau hops. Dark Thai palm sugar lightens the body a bit and makes this 9.5% alc/vol beer dangerously drinkable while a Belgian yeast strain offers further aromatic complexity.

Opal Saison (7.5% ABV)

  • Bringing down the Farmhouse! This dry-hopped saision is Firestone Walker’s interpretation of the rustic Wallonian Saison style, and boasts a harmonious blend of rustic grains, spicy yeast and unique sauvignon blanc tones. Inviting notes of lemongrass and gooseberry meet peppery spice and fresh grain aromas. Spicy Belgian yeast creates a complex yet dry beer with hints of citrus and stone fruit, then ending in a bright tropical white wine finish. Hop bitterness comes from Styrian Golding, Amarillo, and Hallertau Blanc (Dry Hop) and is assertive yet harmonious rounding out slightly tart and refreshing.

Velvet Merlin (5.5% ABV)

  • A decadent oatmeal stout. Velvet Merlin offers robust cocoa and espresso aromas with subtle hop nuances from US grown Fuggle hops. Maris Otter, 2-Row Pale, Roast Barley, English Dark Caramel, Medium Caramel, Carafa Malt, and Oats (15%) make up the extensive grain bill. Rich dark chocolate and roasted coffee flavor with a creamy mouth feel and wonderfully dry finish create the perfect balance in this full-bodied stout. Ideal for sipping in the winter months or at the end of a meal.

Parabola (14% ABV)

  • A Barrel-Aged Russian Imperial Stout–one of the most aggressively and sought-after offerings from the brewery. Bold bourbon, tobacco and espresso aromas and a hint of American oak greet the nose. The grains that make up this monster beer are Crisp Maris Otter Pale, Munich, Cara-hell, Carafa, Dark & Light Crystal, Chocolate, Oats, and Roasted Barley. Rich, charred oak and bourbon-like vanilla fill the palate and create a seamless finish. A remarkably complex brew that offers a transcendental drinking experience – enjoy with good company.

Wookey Jack (8.3% ABV)

  • An unfiltered Black Rye IPA–a unique twist on the Cascadian Dark Ale style. Wookey Jack offers true hop aroma to rival most IPAs, with pungent citrus and herbal hop nuances, a hint of peppery rye and earthiness on the nose. Big roasty malt flavors come from Pale Malt, Malted Rye, Dash of Cara-Rye, Midnight Wheat from Briess, De-Bittered Black Malt (Weyermann – Germany/Patagonia malting – Chile), and just a Dash of Wookey dust. German Magnum (bittering), Citra & Amarillo (flavor/aroma and double dry-hopped) make for a balanced hop bitterness while spicy rye offers a full and complex texture with a refined bittered finish. A truly different IPA for dark beer fans. Wookey Jack won the Gold Medal at the Great American Beer Festival in 2012 and 2013.

A little Crazy

Belgo-style Pale Ale | 6.8% ABV

Pilsner malt base provides a nice toasty flavor with hints of caramel and enough fermentable sugar to make this a rather substantial beer.  Pilsner malt is the base with a little carapils and belgian caramunich malt to finish out the bill. The hops used in the brewhouse are Magnum, Cascade, and Citra with a dryhop blend of Citra, and Cascade. This drives home the aromas of fresh citrus rind to make this a very drinkable and extremely aromatic Belgian American Pale Ale.  A Little Crazy was the 2012 Great American Beer Festival Bronze medal.

T.V. Party

Rye India Pale Ale7.6% ABV | 80 IBU

The latest in the Repo Man soundtrack series, this rye IPA is clean and refreshing.  Brewed with 2-row malt and flaked rye for toasty, nutty undertones up front, with a huge hop flavor and aroma from the Amarillo, and Fuggle hops finish out this brew.

Jukebox Hero

Black India Pale Ale | 7.5% ABV | 75 IBU

This black IPA is bursting with crisp, clean bitterness and layers of wonderful American hop character. Pale Ale, Munich and Naked Golden Oats give a toasty malt backbone with a smooth mouthfeel. The dark ominous color comes from the Chocolate Malt and the de-husked highly roasted malt. Amarillo, Citra, Chinook, Centennial, and Warrior Make up the many layers of hops that contrast with the roasty malt and lend bitterness as well as aromas and flavors of fresh citrus fruit, pine, fresh cut mint and fresh flowers.

Straight Jacket

Barrel-Aged Barley Wine | 13% ABV | 55 IBU

A strong ale to warm your insides in the dead of winter. Pours a dark mahogany color with a mild amount of carbonation and a somewhat lighter body than would be expected of this style beer. Deep aromas and flavors of dark stone fruits, bourbon, molasses, toasted coconut and vanilla come in waves to remind you of the time spent in the barrel.
